Ingredients for making fried oysters
- Thao Yai Mom Flour 3 cups
- 2 cups rice flour
- 1 cup glutinous rice flour
- 1/2 cup sago flour
- 1 cup lime water
- 1 cup oysters
- 1 cup pepper
- Spring onions 1 teaspoon
- 1 cup bean sprouts
- 1 kg of fresh chili
- 1 kg of garlic
- 10 tablespoons of sugar
- 10 tablespoons of vinegar
- 1 egg
How to make fried oysters
- Prepare fried dough by mixing Thao Yai Mom flour, rice flour, glutinous rice flour and sago flour together, then add pepper into it, pour water and lime water into it and mix until all the flour dissolves together. Then put it to marinate overnight in the refrigerator.
- Prepare the sauce by blending the garlic with water thoroughly, then set aside.
- Bring fresh chili to blend with water and squeeze out only the juice of fresh chili, then take the garlic juice. Freshly squeezed chili paste, sugar and vinegar are boiled to break it up. Then add 2 tablespoons of Thao Yai Moh flour to get the sauce for fried clams.
- Prepare to heat it. Add clams and flour to fry. Make a sheet and put the eggs into it. Fry until crispy on both sides, then iron out the oil so that it is not too oily.
- Stir-fry the bean sprouts to startle the fire and serve them on a plate. Place fried clams on top of bean sprouts, sprinkle with pepper and spring onions. Serve with fried oyster sauce.
