Ingredients used to make pork legs

  • Pork knuckle (1 leg) 2000 g.
  • 4 cinnamon sticks
  • 4 star anise
  • 2 pieces of old galangal
  • 5 coriander roots
  • 1 tbsp black pepper
  • 8 shiitake mushrooms
  • 150 grams of palm sugar
  • 3 tablespoons of sugar
  • Chinese garlic 10 cloves
  • 1/4 cup soy sauce
  • 1/2 tbsp ground salt
  • 3 tablespoons green cap cooking sauce

STEP 1 : Fried Pork Knuckle

  • Fry the pork legs using high heat. Fry in oil without overflowing with oil. which we will fry in reverse In order not to waste oil until the pork skin is fluffy, scoop up and set aside to drain the oil.

STEP 2 : Braised Pork Knuckle

  •  Set the pan on the stove using low heat. Then add cinnamon. Followed by anise, garlic and galangal, roasted until fragrant.
  • Put the fried pork leg in the pot Add toasted spices, black pepper and coriander root.
  • Put palm sugar in the same pan Simmer until the palm sugar dissolves and turns dark brown. Add water, wait for the sugar to dissolve, then pour it into the pork leg pot.
  • Fill with water until the pork leg is covered. Bring to a boil using medium heat. Season with soy sauce, ero, green cap cooking sauce, salt and sugar. When it boils, add shiitake mushrooms.
  • Adjust the heat to low and simmer for about 5 hours.

STEP 3 : Serve

  •  Remove the pork leg from the pot. Remove the meat and serve with hot steamed rice, blanched kale, pickled cabbage, paprika, and garlic.
