raw material
  • 1 Chinese bitter gourd
  • 200 g minced pork
  • Glass noodles, soaked in water, cut into short strips ½ cup
  • 1 tsp granulated sugar
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 5 coriander roots
  • (finely chopped 2 roots mixed with pork, the rest dented in broth)
  • 2 teaspoons minced garlic
  • a pinch of salt
  • a little ground pepper
  • 4-6 shiitake mushrooms soaked in water, stems removed
  • 3 cups broth
how to do
  • Prepare the bitter gourd by cutting the bitter gourd into pieces about 2 inches long, pulling out the guts, and sprinkle some salt to mix all over the bitter gourd pieces.
  • Let it rest for 20 minutes. Rinse off with clean water. Drain and set aside.
  • Mix minced pork, vermicelli with sugar, oyster sauce, soy sauce, coriander root, salt, ground pepper, and mix well. Stuff the pork mixture in the gourd pieces and press firmly. Put it on but don't let it overflow. When cooked, the pork will push slightly outside the bitter gourd pieces.
  • Bring the broth to a boil, add coriander root, shiitake mushrooms, bitter gourd, boil until the bitter gourd is cooked, reduce the heat and simmer over low heat for about 1 hour until the bitter gourd is tender. Regularly spoon out the bubbles and season with salt and soy sauce as you like. Serve garnished with coriander leaves.
